WHY WE EXIST
We didn't open Behind Bar because we loved cocktails. Loving cocktails is easy — anyone can love a good drink. We opened Behind Bar because we didn't know how to do anything else, and because we couldn't stand doing it for somebody else anymore.
Years behind other people's bars taught us the trade. They also taught us exactly what we didn't want: a menu we didn't choose, a concept we didn't believe in, a "no" every time we had an idea worth trying. There's a specific kind of frustration that comes from knowing exactly how a drink should be built — and not being the one who gets to decide.
So this is what happens when two people run out of patience for someone else's cocktail list.
Every clarification, every infusion, every glass that comes across this bar is ours — built the way we'd want it built if no one was stopping us. That's not romantic. It's necessity. This is the only thing we know how to do, and the only thing we want to do, so we stopped asking permission to do it properly.
Our Cause.
Tooting deserves more than fast service and forgettable nights out. We're not chasing trends — we're chasing decency. The kind of hospitality that used to mean something: a bartender who remembers your name, a room that feels considered rather than rushed, a drink built by someone who actually cared how it turned out.
Next door, two chefs — one from Miami's fire, one from Rome's discipline, both sharpened by Michelin-level London kitchens — were chasing the same thing from the food side. We didn't plan to end up next door to each other. But once we did, the rest was obvious.
So that's what we build, together: old craft, new technique, zero compromise — because at this point, it's the only way either of us knows how to work.
